Greek Spice Cake Recipe

Who doesn’t love a nice sweet treat every once in a while? Treat yourself and guests to a Greek Spice Cake at your next event. What better way to enjoy life than with cake!?

1 tbs. shortening
2 tbs. plus 2 ½ c. all-purpose flour, divided
1 c. sugar
1c. packed brown sugar
1c. canola oil
1c. buttermilk
3 eggs
1 tbs. vanilla extract
1 ½ tsp. almond extract
1 ½ tsp. baking powder
1 tsp. salt
1tsp ground cinnamon
½ tsp. ground cloves
½ tsp. baking soda
1 c. chopped pecans
1 tsp. confectioners’ sugar

Preheat oven to 325.

Grease a 10-inch bundt plan with shortening and lightly coat with 2 tbs. flour. Set aside.

In a large bowl, beat sugars, oil, buttermilk, eggs and extracts until well blended. Combine remaining flour, baking powder, salt, cinnamon, cloves and baking soda. Gradually beat into the sugar mixture until well blended. Stir in pecans. Pour batter into bundt pan.

Bake at 325 for 50-60 minutes or until a toothpick comes out clean.

Cool for 10 minutes before removing from pan. Place on wire racks to cool. Dust with confectioners’ sugar.
